Step 1: Preparation

Enjoy the TexMex flavors of the Chipotle Chops with smoked salsa. Want to get started? Begin by generously seasoning the chops with the spicy but not overly hot Chipotle Rub. For a milder effect, simply use less rub, depending on your preference. Let the rub marinate for at least an hour in the refrigerator to allow the flavors to fully develop.

Step 2: Grilling time!

Meanwhile, heat up your closed barbecue to a stable temperature of 140-150 °C. Place the Chipotle Chops on the grill and barbecue them slowly until they reach a core temperature of 60 °C for rib or loin chops, and 70 °C for shoulder chops. The cooking time can vary from 30 minutes to 1.5 hours, depending on the thickness of the meat. Remove the chops from the barbecue, wrap them in aluminum foil, and let them rest for at least 10 minutes. Now, heat up the barbecue to 200 °C for a nice grill crust or grill marks on the meat. The ideal core temperature for rib or loin chops is 63 °C and for shoulder chops is 74 °C.
