Blackened onions

Ingredients:

  • Whole onions
  • Salt
  • Pepper
  • Sugar
  • Butter
  • Balsamic

Additional requirements:

  • Barbecue
  • Charcoal or briquettes
  • Oven-proof dish

Step by step

Step 1: Preparation

Place the onions very directly on or between the hot coals. Turn frequently until the outside is completely black and the onion is buttery soft. This may take 1 to 1.5 hours. Test with and sharp knife; if you prick it with a knife and the inside feels buttery soft, the onion is ready.

Step 2: Finishing

Remove the onions from the coals and let cool until manageable. Remove the charred outside and place the white inside in an oven-proof dish. Add a generous knob of butter, pepper, salt and sprinkle with Balsamic and some sugar. Let the onions caramelize in a hot, covered barbecue.

Step 3: Serve

On a steak or burger, as a side dish, in a salad, on a piece of bread or as an ingredient in another dish.
