BBQ duck breast recipe

Preparation Brining: at least 90 min
Curing: 45 – 60 min
BBQ temperature: 90 °C
Core temperature: 55 °C

Materials

  • Closed BBQ fired at 90 °C
  • Mixing bowl
  • Block of smoking wood

Step by step

Step 1: Prep the grill

Cut the skin of the duck breast crosswise whilebeing careful not to cut into the meat.

For dry brining:
Cover both sides of the duck breast generously with Allbrine No.1 and refrigerate for at least 90 minutes. Then rinse off the excess brine with cold water and pat the duck breast thoroughly dry.

For wet brining:
Dissolve 100 grams of Allbrine No.1 in 1 liter of boiling water and chill to a temperature of no more than 7°C.
Place the duck breast in the brine solution in the refrigerator for at least 90 minutes.
Then rinse off the excess brine with cold water and pat the duck breast dry thoroughly.

Evenly heat your BBQ to 90 °C and add smoking wood.

Step 2: Preparation

Grill the duck breast on the meat side for about 60 minutes until a core temperature of 55°C is reached.

Step 3: Serve

Serve the duck breast with Grate Goods Spicy Onions Barbecue Pickles.
