Green Chili Huevos Rancheros

Ingredients

  • 150 gr. smoked bacon bits
  • 1 kg pork or chicken
  • Green chillies
  • 1 large onion
  • 3 large garlic cloves
  • 1 green bell pepper
  • 1 leek
  • Tomatillos (green tomatoes)
  • 1 liter chicken stock
  • Oil to fry in
  • 2 tablespoons Grate Goods Spicy Chipotle BBQ Rub
  • 1 tablespoon ground cumin
  • Fresh celery leaves
  • 50 grams flour

BBQ temperature: 140°-160°C

Tips

Garnish with, for example:

Fresh coriander, spring onion, grated (Cheddar) cheese, avocado, sour cream, nachos, beer bread, rice, jalapeño pepper

Step by step

Step 1: Preparations

Roast the green peppers on the BBQ Let them cool down and remove the seeds. Cut the green pepper, onion and bell pepper, leek and tomatillos into small cubes and chop the garlic. Cut the meat into cubes.

Step 2: Grill

Sauté the meat, bacon, onion, garlic and bell bell pepper in the oil. When the onion is translucent, turn the heat down low, add the Spicy Chipotle BBQ Rub and heat briefly. Add the flour and let it cook for about 15 minutes on low heat. The flour should not color, so stir regularly.

Add a quarter of the chicken stock and let it bind with the flour while stirring. Add the rest of the stock. Add the green peppers, leeks and tomatillos. If not everything is covered add some extra water or broth.

Simmer for 1 to 2 hours until the meat is tender and the sauce is slightly bound. Remove from the heat and add the cumin and a handful of chopped celery leaves.

Step 3: Serve

Finally: Crack a few eggs into the green chile and let them congeal. Sprinkle some grated (Cheddar) cheese on top or add Jalapeño pepper for a little more spice.
